Saturday Brunching

This morning I cooked myself a yummy vegetarian brunch and I thought I would share it with you, in case you needed some 'healthy brunching' inspiration.
I recently made superfood bread, inspired by Deliciously Ella, which is just amazing and great toasted. It went perfectly with my Saturday brunch.

Two slices toasted superfood bread with avocado spread over it.
Two oven cooked quorn sausages.
One roasted tomato.
Cauldron smoked tofu, cut into chunks and stir fried in coconut oil and spinach, sprinkled with coarse sea salt, black pepper and chilli flakes.
